Matcha Rose Croissants

Special occasions are not the only cause for sweet treats. When you're seeking something to satisfy that craving but you don't know where to start, we recommend thinking about your favorite flavors. Iconic combinations are probably coming to mind — caramel and chocolate, lemon and lavender, strawberries and cream, and of course, one of our favorites — matcha and rose. If you're like us and can't get enough of matcha these days, but don't have time to bake a whole cake, we've come up with a semi-homemade solution to elevate your everyday baked goods. Let's say you love laminated pastry, but can't spend two days in the kitchen. Consider taking a shortcut. We used croissants from our favorite local bakery, dressed them up with a sweet matcha cream and adorned them with vibrant pink rosebuds. The end result is a flaky balance of buttery, sweet umami goodness. Paired alongside a rose matcha tea, the croissants can elevate a simple morning at home or a big brunch with your girlfriends. Take it from us, it'll be hard to have just one.

Ingredients:

Croissants from your favorite bakery

Matcha Cream:

  • 3g matcha powder of your choice (we recommend Ippudo)
  • Hot Water (180° F)
  • 50g Heavy Whipping Cream 
  • 10g White Sugar
Shangri-La Rose

Recipe:

  1. Pick up a plain croissants from your favorite bakery. We recommend large and tall ones with a flakier exterior that can be cut.
  2. Using a serrated knife, cut croissants in half.
  3. Make the matcha cream by placing matcha powder into a small bowl, adding water, and whisking vigorously in zig-zag motions until there are no visible clumps. 
  4. Add heavy whipping cream and sugar into a separate bowl and beat it until it thickens, but before it reaches stiff peaks. 
  5. Pour matcha mixture in and mix well. 
  6. Refrigerate for 30 minutes. 
  7. Add a light dusting of matcha or confectioners sugar over the tops of the croissants.

8. Spread matcha cream on bottom of croissants and add crushed rosebud rose petals over it. Join the top and bottom of croissants.          

9. Place whole rosebuds on top of pastries, using a small portion of paste to serve as your glue.

10. Enjoy alongside a pot of matcha and add one Shangri-La Rose for elevated sweetness and a wonderful depth of flavor.
